It’s been a long year and a lot of changes. I’m hopeful that I will be able to post more often here as things settle.
I’ve been unofficially diagnosed (for sake of insurance) with Ehlers Danlos Syndrome (EDS) and tentatively diagnosed with POTS. I’m hoping to get an appointment with the cardiologist soon for a definitive answer to what my GP said is POTS and possibly how to live with it better since she didn’t really say much about it. I’ve changed my diet once again and I do believe it is helping, I’m now off sugar and potatoes. That means my -free list is now: gluten, soy, sugar, potatoes, and conventional meat, dairy, and eggs. (I say conventional because I have found grass-fed/soy free options that I can eat that don’t bother me.)
My little girl is now 3 and we have started preschool (homeschooled), which we are enjoying very much. Although it sometimes is rough with the exhaustion and pain, I wouldn’t have it any other way. Hearing her beg for another book (she even sits through a chapter book now) and become excited to sort, count, and make patterns is such a blessing.
My husband has definitely been doing a lot of extra work around the house and with our daughter. He’s also been starting up a new business, Top 8 Plus Culinary Coaches, working with individuals who have dietary restrictions to educate how to make the adjustments necessary and not feel like their lives are deprived. Hopefully soon he’ll be posting YouTube videos on a few things related to the business, but also day to day changes/hacks that we’ve learned through our own journey.
All that said, I finally got a gluten free, soy free, sugar free cupcake to work! Only took a half dozen or so tries😉 I’ll be sharing the details soon and to die for brownies…
