We finally made some fresh bread and so I decided I needed a sandwich. Ppj? No jelly, I’ll make some next week. Grilled cheese? Not enough meltable cheese. Tuna salad? No mayo…but….there are other ways to dress it up.
After a Google search and 100 tweaks later, I had something that tasted good. A little fresh, tangy tuna salad for my still warm bread.
I liked it, hubby did too, and lo couldn’t get enough. In fact, I had to make double for dinner so we could have stuffed tuna salad sandwiches.
Mayo-less tuna salad
Prep: 10 min.
1 tsp Dijon mustard
½tsp lemon juice concentrate
¼tsp black pepper
1 tsp fresh basil
1 tsp parsley
1 Tbsp fresh scallion (greens only)
1 small peeled and minced carrot
1 baby dill pickle minced
1 can tuna in water (drained)
Mix well and enjoy
